The ingredients needed to prepare Malai Ice-cream/Kulfi:
  1. You need full cream milk
  2. Take malai
  3. Take sugar
  4. Prepare cardamom powder
  5. Use wheat flour
  6. Take Chopped dry fruits
  7. You need Kesar leaves
  8. You need Milk Powder(optional)
Steps to make Malai Ice-cream/Kulfi:
  1. Cook the milk in a heavy base pan or in an iron walk till it reduces to less than half. It will take 12-15 min. Then add malai, sugar, milk powder, cardamon powder, some dry fruits, Kesar leaves & cook for another 5 mins.
  2. Slow the flame. Take 1/2 cup ready hot milk & add wheat flour into the cup. Now mix properly so that no lumps can form.
  3. Add this mixture to the cooking liquid. After 1 min liquid will become thick. Turn off the gas & wait for the mixture cool down.
  4. Take the mixture in a grinder and grind it for 1-2 min. Now pour the mixture in Kulfi molds or any airtight container, cover it with foil paper & freeze for 2 hours.
  5. After 2 hours again grind the mixture and pour to the container, do topping with some chopped dry fruits, cover with foil paper and freeze it for 6-7 hours.
  6. Note- Milkmaid can be used instead of malai & milk powder.
