- You need For Sabji
- Take 250 gm Ghisoda / Snake guard
- Use 3 tbsp oil
- Provide 8-10 garlic cloves chopped
- Take 1/4 tsp asfoitida
- Use Salt as require
- Take 1/2 tsp turmeric powder
- Take 1 tsp red chilli powder
- You need 1/2 tsp cumin and coriander powder
- You need 1/2-3/4 cup gathiya (readymade)
- Provide Water as require
- You need For bhakhari
- Get 1 1/2 cup wheat flour
- Get 3 tbsp oil
- Use Salt as require
- Prepare Water as require
- Provide Ghee/ Clarified butter as require
- Get Milk to serve
Instructions to make Kathiyawadi Thali:
- Wash guard properly, peel and chopped them.
- Heat oil, add chopped garlic and saute till light pink. Add asfoitida and chopped guard. Add salt and turmeric powder, mix well and cook covered without water.
- Check this after 5-7min, is it cooked or not, if not then cover and cook again for 2min. (Water is from guard it self, don't add water while it's cooking)
- Now add red chilli powder and cumin and coriander powder. Add salt if require. Mix well and simmer till oil release.
- Now add cup of water and simmer for 2min. Then add gathiya and give a stir. Again simmer for a minute.
- Take flour into big bowl, add oil and salt. Mix well. Then add water gradually and bind very stiff dough, make sure not to knead first. Make 5 equal size of balls, and prepare thick roti from it.
- Heat earthen tawa on medium to low heat and add bhakhari to that tawa, wait till it turns light brown and then cook properly till light brown and crispy, then turn that on low open flame till fluffy and light brown. Apply clarified butter/ghee and serve.
