Steps to make Mix veg in brown gravy:
  1. In a pan heat 1cup of water, add salt. Into water add diced 3 onion and 2 tomatoes. Garlic and ginger pice chopped, cashews, whole spices and salt as require. Simmer for 8-10min. Then let it cool down.
  2. Strain the water and keep water to add in sabji. And add cooked onion and tomatoes into a mixture jar, now add 1 remaining tomato and onion, green chilli and make a smooth paste.
  3. Chopped french beans, carrot, cabbage into small cubes, add peas into it. Capsicum and onion chop sepraeltely in same size. Heat enough quantity of water and add salt, add vegetables chopped (carrot, peas, cabbage and French beans) and par boil them. Keep it's water too for sabji.
  4. Take a big, thick kadhai or pan, lightly heat oil and ghee together. Add cumin seeds and wait for a while. (Do not over heat) add prepared puree and mix well. Cook for 7-8min on slow to medium heat with lid covered. Stir in between.
  5. When it release oil, then add dry masala, turmeric, chilli, and kitchen king masala and salt as require. Mix well and cook for a min. Then add cooked mix vegetables and, chopped capsicum and onion (uncooked) and mix well. Add vegetable's water to adjust consistency. Add cream and milk, again cook for 2min. Then add kasuri methi, hand crushed. And simmer for 4-5min, stir in between. When it release oil again. Then it's ready.
  6. Now last add grated paneer and mix well. Garnish with chopped coriander leaves and serve with naan, paratha or roti.
