  1. Rava idly :In a pan add ghee, once heated add mustard, urad dal, Chana dal, curry leaves, chopped green chillies and ginger.
  2. Mix everything well and then add roasted sooji/rava. Switch off the gas when sooji's colour changes.
  3. Now transfer the roasted ingredients to a bowl. Add curd, water, cooking soda and salt. Let it rest for 30 mins.
  4. Now grease idly steamer with ghee and pour the rava idly batter into it. Switch on and keep the flame in high.
  5. Wait for 10 mins. Now yummy piping hot rava idly is ready. Serve with coconut chutney and tomato chutney.
  6. Add broken corn flour in a bowl and add water little by little like sprinkling.
  7. The mixture should hold together and if broken it has to fall apart easily. Add water to the flour until you get this texture.
  8. Grease the idly steamer with little ghee. Cover it with a cloth and add the puttu mixture and spread it evenly. Now add the grated coconut above it and close the lid.
