The ingredients needed to prepare Kanji vada:
  1. Provide 1/2 cup urad dal
  2. Prepare 1/2 cup moong dal
  3. You need 2 tbsp yellow mustard
  4. Prepare 1/2 tsp red chilli powder
  5. Prepare 1/2 tsp black salt
  6. Prepare 1/2 tsp salt
  7. You need 1/4 tsp roasted cumin seeds
  8. Use 1/4 tsp turmeric powder
  9. You need 2 green chilli
  10. Prepare 1 pc ginger
  11. Prepare 2 tsp mustard oil (optional)
Instructions to make Kanji vada:
  1. Grind the yellow mustard, add the remaining spices.
  2. Take a bottle, add 1-1.5 ltr water.
  3. Add all the spices in the bottle and keep for fermentation for 24-48 hrs.
  4. Soak urad dal and moong dal. Then grind it to smooth paste. Add ginger and green chilli. Salt and turmeric powder.
  5. Beat till fluffy, then heat oil and make small balls and deep fry on slow flame to medium till done. Then soak in water for couple of hrs. Now transfer the vadas in the water prepared and again ler it be for some hrs or overnight. Serve when reqd.

Kanji Wada is made during Holi and Diwali and mostly during winters as the mustard in it heats up body and helps during those severe cold season. The Kanji Vada Recipe is a traditional recipe from Rajasthan and a delicious dish that is made from lentils soaked in a mildly spicy fermented mustard curry.
