  19. Prepare 1 ball Tamarind(lemon size)in ½ cup water
  20. Prepare 5 tbspn coriander leaves (chopped)
Steps to make Okra/ Vendakka Sambar:
  1. Take all the ingredients under To pressure cook in a cooker, add water and cook for 4 whistles. Lower flame for 10 minutes.
  2. Soak tamarind in water. Take ladies finger and dry roast till stickiness disappears. Keep aside.
  3. Heat oil in a vessel, add vadavam and dry red chilli. (Instead of vadavam you can also add mustard seeds,urad dhal, fenugreek seeds and chopped shallots and fry till dark brown)
  4. Next add curry leaves,1 tbspn coriander leaves.
  5. Now add onions and saute till translucent. Then add tomatoes cook till mushy.
  6. Add salt and red chilli powder. Saute till raw smell goes.
  7. Mash the cooked dhal in pressure cooker and add the ladies finger to it.
  8. Extract tamarind water. Add dhal and tamarind water. Check salt and tanginess. Cover and cook till it boils.
  9. Garnish with coriander leaves. Serve hot with steamed rice or for tiffin.
