The ingredients needed to prepare Mathari:
  1. Prepare 11/2 cup wheat flour (for bhakhari)
  2. Take 3 tbsp clarified butter hot
  3. You need As required Hot milk (1/2 to 3/4 cup approx)
  4. Take 1 tbsp malai from milk
  5. Use As required Oil to fry
  6. Use 3/4 cup sugar for syrup

  1. Take flour into big bowl, add hot ghee and mix well. Now add malai and mix. Then add hot milk and bind very stiff dough. Give rest for 10-15 mins.
  2. Now you need to add some water, handful and mix well. Roll the small balls and roll with roller pin into 2-3 inch diameter and thick. Do all as it is from rest of dough.
  3. Heat oil in a heavy pan, and keep flame low. Add rolled mathari in small batch. And fry till brown and crispy. Keep aside till cool down completely.
  4. Heat a saucepan and add sugar, and little amount of water. Keep simmering for 5-7min. Make 2 string syrup. Turn of heat and add 2 drop of clarified butter. Beat it nicely.
  5. Add mathari one by one and keep in plate horizontally. This step you have do very quickly.Now let it cool down completely. Then store it in cool place in container.
