The ingredients needed to prepare Dhuska:
- Use for Dhuska
- Get 2 cups Chana Dal
- Use 1 cup rice
- Provide 3-4 green chillies chopped
- Use 1” ginger chopped fine
- Use 2-3 garlic cloves chopped fine
- Prepare 1 medium sized onion chopped fine
- Use 1/2 tsp turmeric powder
- Take 1 tsp red chilli powder
- You need 1 sprig coriander leaves chopped fine
- Prepare 3/4 cup water
- Prepare 1/2 cup oil to fry
- Use As per taste Salt
- Take For Rasa Aloo
- Prepare 2-3 big potatoes washed, boiled, peeled and cut into 1” pieces
- Use 1 tsp ginger paste
- Use 1 tsp red chilli powder
- Prepare 1/2 tsp turmeric powder
- You need 1/2 tsp asafoetida
- Take 1/2 tsp cumin seeds
- Get 1/2 tsp coriander powder
- Use 2-3 green chillies chopped
- Provide Sprig coriander leaves chopped
- Prepare as per taste Salt
- Get 3 Tbsp mustard oil
Steps to make Dhuska:
- Fur Dhuska - Soak Rice & Chana Dal separately overnight. Strain and put in a blender alongwith ginger, green chillies, garlic, water and blend well. Consistency should be semi thick, once done add onion, coriander, turmeric powder, red chilli powder, salt and beat well.
- In a wok heat oil and on medium flame put a ladle of the batter and fry. Flip the other side after a minute, fry golden in colour. The centre should swell. Dhuska is done, set aside.
- For Aloo rasa- Boil potatoes and cool, peel and make 1” cut sizes. In a wok heat oil, add asafoetida, cumin seeds and when splutters add potatoes. Stir for 2-3 mins, add coriander powder, ginger paste, turmeric powder, red chilli powder, chopped green chillies and stir well.
- Add water and add salt, stir well. Add coriander leaves chopped and once a semi thick consistency is reached dey aside.
- Plate and enjoy hot Dhuska
