The ingredients needed to make Vegetable sambar:
  1. Provide 1 cup toovar dal
  2. Get 1 onion , chopped
  3. Get 4 cloves garlic finely chopped
  4. Use 2 chilis Green chopped

  6. Take 2 brinjals , cubed
  7. Provide drumstick cut lengthwise
  8. Use 1 potato , cubed

  11. Prepare 1 tbsp tamarind pulp
  12. Use 1/2 cup Jaggery water (optional)
  13. You need 1 tsp mustard seeds
  14. Take 6 curry leaves
  15. Provide 4 to 5 red chili dry
  16. You need Coriander leaves
  17. Use 3 tspns oil
  18. Take 1 tspn chili powder red
  19. You need 1 tspn coriander powder
  20. Use 4 teaspoons sambar powder
  21. You need 1/2 tspn Turmeric powder
Steps to make Vegetable sambar:
  1. Clean and wash the toovar dal.
  2. Boil dal in a pressure cooker along with brinjals, drumstick and potato, carrot by adding water.
  3. Heat oil in the pan, add mustard seeds, when it starts crackling add curry leaves, dry red chilli, onion, garlic, ginger and green chilli, fry it for 2 minutes.
  4. Add dry masala, mix it for 1 minutes add tomatoes, add little water cook it for 5 minutes.
  5. Add boiled dal stir for 2 minutes, add  jaggery and tamarind pulp.
  6. Bring it to boil for 10 minutes, add coriander leaves stir it for 1 minute.
  7. Garnish with coriander, serve hot with idly or Dosa
