- Be ready with all the ingredients.
- In a kadai, heat oil add cumin seeds, green chillies and ginger. Saute for a minute.
- Now add the boiled mashed green peas and the spices. Mix well. Cook for 2 minutes. Switch off the flame and keep aside.
- Now in the same kadai, heat oil add mustard seeds and let them crackle. Add the Semolina and double quantity of water. Add salt. Mix well till the Semolina absorbs the entire water and leaves the sides of the kadai.
- Switch off the flame. Transfer the mixture to a plate. Add chopped coriander leaves and let the mixture cool down. One cool knead a smooth dough of the Semolina mixture.
- So the peas (matar) stuffing and semolina (Suji) covering both are ready.
- Prepare small lemon sized balls of the Semolina mixture. Flatten them, place the peas mixture in the centre and roll into a ball again. Now slightly press and flatten them in between your palms to give kachori shape.
- Deep fry them on medium flame and then on high flame.
