- Take few ajwain seeds
- Use Few black cumin seeds
- Prepare 1/8 cup melted ghee
- Get as required water for kneading dough

Steps to make Matar ki kachauri:
- Take maida in a bowl, add 1/8 cup ghee, salt, ajwain and black cumin seeds, mix well. - Adding water gradually knead it to make a soft dough. Keep it aside, keep covered for 10-15 minutes. Divide the dough into 8 equal size balls.
- Heat ghee in a kadahi, add 4-5 cumin seeds, let it crackle, add a pinch of turmeric powder, peas and salt, immediately add water, cook covered for 5 minutes on low flame.
- Remove the lid, peas should have become soft, saute for another 2-3 minutes and let the remaining water in kadahi dry, add sugar and let it melt and peas be shrunk. - Switch off the flame and take the cooked peas in a plate, let it cool.
- Add cooked peas, cumin seeds and ginger into a grinder and grind it very smoothly without adding water. - (Don't add water otherwise you cannot fill this into the dough, it takes time to blend smooth, so have patience and try blending in intervals)
- Once you reach the smooth consistency, start filling this into balls(dough) one by one. - Roll into circular shape and deep fry. Serve hot with sweet tomato chutney and pickle of your choice.
