- You need 3-4 boiled and mashed potatoes

Instructions to make Aalu puri:
- For making aalu masala take a pan add oil then add Mustard seeds,cummin seeds, asafoetida.
- Now add ginger chilli paste and add turmeric,Red chilli powder, coriander powder and quickly add mashed potatoes and mix well.
- Now add salt, aamchur powder,garam masala and mix well.
- Now add little water and mix then cook for while.
- Then add chopped coriander.Now our masala is ready.
- For making kokam chutney boil kokam for 10 minutes by adding salt,sugar,cummin powder,Red Chilli powder,dry ginger powder and crush in blender.now strain this chutney.
- Now for dough take a bowl add maida,salt and gher.now mix and add water gradually and knead a dough.
- Now make equall sized balls from it.
- Then roll big sized chapati and cut small round using cookie cutter.
- Now heat oil in kadai and fry all quickly without being brown in colour.
- Now putvthem one by one on another.
- Now take a Serving plate put puris on it.
- Then put aalu masala, Now put green chutney and kokam chutney on it one by one.
- Now put masala sev on it.then put onion julliens and sprinkle chat masala on it.now aalu puri is ready to serve.
- For CHEESY aalu puri apply grated cheese on it.
- For Schezwan cheese flavour put Schezwan chutney on it and serve.rest will be same.
